Instructions

  • Make the Crust: Preheat oven to 350ยฐF (175ยฐC). In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into a 9-inch pie dish. Bake for 8-10 minutes until lightly golden. Let cool.
  • Prepare the Filling: In a large bowl, whisk together sweetened condensed milk, key lime juice, lime zest, and egg yolks until smooth.
  • Bake the Pie: Pour the lime filling into the cooled crust. Bake for 15 minutes, or until the filling is set but still slightly jiggly in the center. Let the pie cool to room temperature, then refrigerate for at least 3 hours to fully set.
  • Whipped Topping: In a large bowl, beat heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
  • Finish: Once the pie is chilled, spread or pipe the whipped cream on top. Garnish with extra lime zest or thin lime slices if desired. Serve chilled.
