  • 1 cup granulated sugar
  • 1 tsp baking powder

  • ยฝ cup unsalted butter, softened
  • 2 large eggs
  • ยฝ cup milk
  • Zest of 1 lemon
  • 2 tbsp fresh lemon juice
  • 1 cup fresh or frozen blueberries

Instructions

  • Preheat oven to 350ยฐF (175ยฐC) and grease a loaf pan.
  • In a bowl, combine flour, baking powder, and salt.
  • In another bowl, beat butter and sugar until fluffy. Add eggs one at a time.
  • Mix in lemon zest, lemon juice, and milk.
  • Gradually fold in the flour mixture, then gently add blueberries.
  • Pour batter into the loaf pan, and bake for 50-60 minutes, or until a toothpick comes out clean.
  • Let cool before slicing.

Notes

  • For extra lemon flavor, drizzle with a lemon glaze made from powdered sugar and lemon juice.
  • Use fresh or frozen blueberries; if using frozen, do not thaw before adding.
