  • 4 large eggs

Instructions

  • In a heatproof bowl, combine lemon zest, lemon juice, sugar, and eggs. Whisk until smooth.
  • Place the bowl over a pot of simmering water, ensuring the bowl does not touch the water.
  • Add the butter pieces and salt to the mixture.
  • Cook, stirring constantly, until the mixture thickens and coats the back of a spoon (about 10-15 minutes).
