  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) brown sugar, packed
  • 1 large egg
  • 2 tablespoons lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 3/4 cups (210g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon ground ginger
  • 1/4 cup crystallized ginger, finely chopped
  • 1/4 cup granulated sugar (for rolling)

Instructions

  • Preheat the oven to 350ยฐF (175ยฐC).
  • Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the egg, lemon zest, lemon juice, and vanilla extract.
  • In a separate bowl, whisk together flour, baking soda, baking powder, salt, and ground ginger.
  • Gradually add the dry ingredients to the wet mixture, mixing until combined.
  • Fold in the finely chopped crystallized ginger.
  • Roll the dough into 1-inch balls and coat each in granulated sugar.
  • Place the dough balls onto a lined baking sheet, leaving space between each cookie.
  • Bake for 10โ€“12 minutes until the edges are lightly golden.
  • Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Adjust the amount of crystallized ginger based on your preference for spiciness.
  • For more intense lemon flavor, increase the lemon zest slightly.
