  • For the Crust and Crumb Topping:
    • 1 cup unsalted butter, melted
    • 2 cups all-purpose flour
    • 1/2 cup granulated sugar
    • 1/4 cup brown sugar
    • 1 teaspoon vanilla extract
    • 1/4 teaspoon salt
  • For the Lemon Strawberry Filling:
    • 2 cups fresh strawberries, hulled and diced
    • 1 tablespoon lemon zest (from about 1 lemon)
    • 1/4 cup lemon juice (freshly squeezed)
    • 1/3 cup granulated sugar
    • 2 tablespoons cornstarch

Instructions

  • Preheat oven to 350°F (175°C). Line a baking pan with parchment paper.
  • Mix melted butter, flour, sugars, vanilla, and salt until crumbly. Press half into the pan for the crust.
  • Toss diced strawberries with lemon zest, juice, sugar, and cornstarch to make the filling.
  • Spread the strawberry mixture over the crust. Crumble remaining dough on top.
  • Bake for 35-40 minutes or until golden. Cool completely before cutting into bars.

Notes

  • Store the bars in an airtight container at room temperature for up to 3 days.
  • Use frozen strawberries if fresh are unavailable, but thaw and drain them first.
