  • 1.5 lbs boneless, skinless chicken breasts, diced
  • 4 large potatoes, peeled and cubed
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup sour cream

  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cubed potatoes in olive oil, garlic powder, paprika, salt, and pepper. Spread them evenly on a greased baking sheet and roast for 30 minutes, stirring halfway through.
  3. While the potatoes are roasting, cook the diced chicken in a skillet over medium heat until browned and cooked through. Season with salt and pepper.
  4. In a greased 9x13-inch casserole dish, combine the cooked potatoes and chicken.
  5. Stir in sour cream, half the cheese, and half the crumbled bacon. Mix everything well.
