This authentic Louisiana Red Beans and Rice recipe is a comforting, smoky, and flavorful Southern favorite. Made with red beans, andouille sausage, and aromatic spices, it’s the perfect dish for any occasion.

  • 1 lb dried red beans (soaked overnight)
  • 1 lb andouille sausage, sliced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 3 celery stalks, diced
  • 4 garlic cloves, minced
  • 1 tsp thyme
  • 2 bay leaves
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (optional)
  • 6 cups water or chicken stock
  • Salt and pepper to taste
  • Cooked white rice for serving
  • Chopped green onions for garnish

Instructions

  1. Heat a large pot over medium heat and cook the sliced andouille sausage until browned. Remove and set aside.
  2. In the same pot, sauté onion, bell pepper, and celery until softened. Add garlic and cook for another minute.
  3. Stir in the red beans, thyme, bay leaves, paprika, and cayenne pepper. Add the sausage back to the pot.
  4. Pour in water or chicken stock, bring to a boil, then reduce heat to simmer. Cover and cook for about 1.5-2 hours, stirring occasionally.
  5. Once the beans are tender, mash some against the side of the pot to thicken the mixture. Season with salt and pepper to taste.
  6. Serve over cooked white rice and garnish with green onions.

Notes

  • For extra flavor, use smoked ham hocks or a meaty bone.
  • Adjust the spice level by increasing or decreasing cayenne pepper.
  • This dish tastes even better the next day as flavors develop.
