  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper, to taste
  • 2 cups fresh spinach
  • 1/4 cup grated Parmesan cheese
  • Optional: Crusty bread or crackers for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chicken breasts and season with salt and pepper. Cook for 6-8 minutes per side, or until golden brown. Remove and set aside.
  2. In the same pot, sautรฉ the onions, garlic, carrots, and celery until softened, about 5 minutes.
  3. Pour in the chicken broth and bring to a simmer. Add thyme, oregano, and red pepper flakes (if using).
  4. Shred the cooked chicken and return it to the pot. Stir in the heavy cream and let simmer for 10 minutes.
  5. Add the spinach and Parmesan cheese, stirring until the spinach wilts and the cheese melts.
