Ingredients

Scale
  • 12 oz spaghetti or fettuccine
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook pasta according to package instructions, reserve 1 cup of pasta water, and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add shrimp and season with salt and pepper. Cook until pink and opaque, about 2-3 minutes per side. Remove shrimp and set aside.
  3. In the same skillet, add garlic and cook until fragrant, about 1 minute.
  4. Stir in heavy cream, Parmesan cheese, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Simmer for 3-4 minutes until the sauce thickens.
  5. Add cooked pasta to the skillet and toss to combine. Adjust the sauce consistency with reserved pasta water if needed.
  6. Return shrimp to the skillet and toss to coat in the sauce.
  7. Garnish with fresh basil and serve immediately.

Notes

  • For extra flavor, use fresh Parmesan and add a splash of white wine to the sauce.
  • Substitute heavy cream with half-and-half for a lighter version.
  • Use gluten-free pasta to make the dish gluten-free.
