  • Salt and pepper to taste

For the Casserole Assembly:

  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 cup bacon bits (optional)
  • Fresh parsley for garnish

Instructions

  • Prepare the Mashed Potatoes:

    • Boil the cubed potatoes in salted water until tender, about 15-20 minutes.
    • Drain and mash the potatoes with butter, milk, sour cream, garlic powder, salt, and pepper until smooth and creamy. Set aside.
  • Prepare the Crispy Chicken:

    • Preheat oven to 375°F (190°C).
    • Dredge the chicken breasts in flour, dip in beaten eggs, and coat with a mixture of breadcrumbs, Parmesan cheese, paprika, garlic powder, salt, and pepper.
    • Fry the chicken in olive oil over medium heat until golden and crispy, about 4-5 minutes per side. Alternatively, bake the breaded chicken in the preheated oven for 20-25 minutes, until cooked through.
  • Assemble the Casserole:

    • Spread the mashed potatoes evenly in a greased casserole dish.
    • Place the crispy chicken breasts on top of the mashed potatoes.
    • Sprinkle with shredded cheddar cheese, green onions, and bacon bits if using.
    • Bake in the oven for 15-20 minutes, until the cheese is melted and bubbly.
  • Garnish and Serve:

    • Garnish with fresh parsley before serving.
