Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Add the finely chopped onion and diced peppers. Sauté until they are softened.
  • Add the minced garlic and cook for another minute until fragrant.
  • Stir in the peeled and diced tomatoes. Cook until the mixture thickens and the tomatoes break down.
  • Season with salt, pepper, paprika, and red pepper flakes if using.
  • In a bowl, lightly beat the eggs. Pour them into the skillet, stirring gently until the eggs are just set but still creamy.
  • If desired, sprinkle crumbled feta cheese over the top and allow it to melt slightly.
  • Garnish with fresh parsley or dill before serving.
