Ingredients

  • Shredded cooked chicken (rotisserie or leftover)
  • Corn tortillas (cut into strips)
  • Salsa or enchilada sauce
  • Black beans (rinsed and drained)
  • Corn (frozen or canned, drained)
  • Cheddar cheese (shredded)
  • Monterey Jack cheese (shredded)
  • Onion (chopped)
  • Garlic (minced)
  • Olive oil
  • Taco seasoning
  • Salt and pepper
  • Fresh cilantro (for garnish)

Instructions

  • Preheat oven to 375ยฐF (190ยฐC).
  • In a skillet, heat olive oil and sautรฉ onions and garlic until soft. Add shredded chicken, taco seasoning, and salsa; stir to combine.
