Ingredients

  • 4 cups corn kernels (fresh, grilled or frozen & thawed)

  • 1/3 cup mayonnaise

  • 1/3 cup sour cream or Mexican crema

  • 1/2 cup cotija cheese, crumbled

  • 1/2 tsp chili powder

  • 1/4 tsp smoked paprika (optional)

  • 2 tbsp lime juice (fresh)

  • 1/4 cup chopped cilantro

  • 1/4 cup finely chopped red onion

  • Salt & pepper to taste

  • Jalapeño (optional, minced, for heat)

Instructions

  1. Char the Corn: Grill corn or char it in a skillet until slightly browned. Let cool.

  2. Mix Dressing: In a large bowl, mix mayonnaise, sour cream, lime juice, chili powder, and paprika.

  3. Combine Ingredients: Add corn, cotija cheese, onion, cilantro, and jalapeño to the bowl. Mix well.

  4. Season and Serve: Add salt and pepper to taste. Serve cold or at room temperature. Garnish with more cotija and cilantro.

Notes

  • Use frozen corn if fresh isn’t available, but char it for that roasted flavor.

  • Can be made ahead; flavors intensify after chilling.

  • Substitute feta cheese if cotija is unavailable.
