4 cups corn kernels (fresh, grilled or frozen & thawed)
1/3 cup mayonnaise
1/3 cup sour cream or Mexican crema
1/2 cup cotija cheese, crumbled
1/2 tsp chili powder
1/4 tsp smoked paprika (optional)
2 tbsp lime juice (fresh)
1/4 cup chopped cilantro
1/4 cup finely chopped red onion
Salt & pepper to taste
Jalapeño (optional, minced, for heat)
