  • 1 ½ cups warm water (110°F)

  • 2 ¼ tsp active dry yeast

  • 1 tsp salt

  • 1 tbsp granulated sugar

  • 4 cups all-purpose flour

  • 2/3 cup baking soda (for boiling)

  • 1 egg yolk beaten with 1 tbsp water (egg wash)

  • 12 mozzarella sticks or string cheese

  • Coarse sea salt (for topping)

Instructions

  1. In a large bowl, combine warm water and yeast. Let sit for 5 minutes until foamy.

  2. Add salt, sugar, and flour. Mix until a dough forms. Knead 5-7 minutes until smooth.

  3. Let dough rise in a greased bowl, covered, for 1 hour until doubled.

  4. Preheat oven to 450°F (230°C). Line baking sheet with parchment.

  5. Divide dough into 12 equal pieces. Flatten each, place a mozzarella stick in the center, and seal edges.

  6. Bring a large pot of water and baking soda to a boil. Boil each pretzel 30 seconds. Remove and place on baking sheet.

  7. Brush each with egg wash and sprinkle coarse salt.

  8. Bake 12-15 minutes until golden brown. Serve warm.

Notes

  • Make sure the mozzarella is fully sealed to avoid cheese leaks.

  • Can be frozen before baking and baked from frozen.

  • Add garlic butter on top for extra flavor.
