Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 cups sliced mushrooms (button or cremini)
  • 1 cup heavy cream
  • 1 cup grated asiago cheese
  • 1/2 cup chicken broth
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  • Heat olive oil and butter in a large skillet over medium heat.
  • Season chicken breasts with salt and pepper, then sear on both sides until golden brown. Remove and set aside.
  • In the same skillet, sauté mushrooms until softened, then add minced garlic and cook for another minute.
  • Pour in chicken broth and heavy cream, stirring to combine.
  • Add asiago cheese and thyme, letting the sauce thicken slightly.
  • Return chicken breasts to the skillet, coating them with the sauce. Simmer for 10-15 minutes until the chicken is cooked through.
  • Serve hot, garnished with fresh herbs if desired.

Notes

  • Substitute asiago cheese with parmesan or gruyere for a variation.
  • Serve over pasta, rice, or with crusty bread for a complete meal.
  • For a lower-calorie option, use half-and-half instead of heavy cream.
