  • 2 lbs beef chuck, cut into 1-inch cubes
  • 3 tbsp olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 3 large carrots, sliced
  • 4 medium potatoes, peeled and cubed
  • 2 celery stalks, chopped
  • Salt and pepper to taste
  • 2 tbsp all-purpose flour (optional, for thickening)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Brown the beef in batches, then set aside.
  2. In the same pot, sauté onion and garlic until fragrant.
  3. Stir in tomato paste, thyme, and rosemary. Add red wine (if using) and cook for 2 minutes.
  4. Pour in beef broth and return the beef to the pot. Bring to a simmer.
  5. Cover and cook on low heat for 1.5-2 hours until beef is tender.
  6. Add carrots, potatoes, and celery. Simmer for another 30-40 minutes until vegetables are soft.
  7. For a thicker stew, mix flour with a little water and stir into the pot during the last 10 minutes of cooking.
  8. Season with salt and pepper to taste. Serve hot with crusty bread.
