Ingredients

  • Main Ingredients:
    • Chicken: 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
    • Rice: 1 cup long-grain white rice
    • Broccoli: 2 cups fresh broccoli florets
    • Cheddar Cheese: 1 1/2 cups shredded sharp cheddar cheese
    • Chicken Broth: 2 1/2 cups low-sodium chicken broth
    • Milk: 1/2 cup whole milk
    • Onion: 1 small onion, finely chopped
    • Garlic: 3 cloves, minced
    • Olive Oil: 2 tablespoons
    • Butter: 2 tablespoons
    • Salt: 1 teaspoon
    • Black Pepper: 1/2 teaspoon
    • Paprika: 1/2 teaspoon (optional)
  • Optional Ingredients:
    • Parmesan Cheese: 1/4 cup grated Parmesan cheese (for extra flavor)
    • Red Pepper Flakes: 1/4 teaspoon (for a bit of heat)
    • Fresh Parsley: 2 tablespoons chopped fresh parsley (for garnish)
    • Lemon Juice: 1 tablespoon (to brighten the flavors)

Instructions

  • Heat olive oil and butter in a large skillet over medium-high heat. Add the chicken pieces, season with salt, pepper, and paprika, and cook until browned and cooked through. Remove the chicken and set aside.
  • In the same skillet, add the chopped onion and minced garlic, cooking until softened and fragrant.
  • Add the rice to the skillet and stir to coat with the oil and butter mixture.
  • Pour in the chicken broth and milk, bringing the mixture to a boil.
  • Reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is almost cooked.
  • Add the broccoli florets and cooked chicken back into the skillet, stirring to combine.
  • Cover and cook for another 5-7 minutes, until the broccoli is tender and the rice is fully cooked.
  • Remove from heat and stir in the shredded cheddar cheese until melted and well combined.
  • Optional: Sprinkle with grated Parmesan cheese, red pepper flakes, and garnish with chopped fresh parsley and a splash of lemon juice before serving.

Notes

  • Adjust the amount of cheddar cheese for your preferred level of cheesiness.
  • Use chicken thighs for a juicier result.
  • Add red pepper flakes for a bit of heat.
