Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz penne pasta
  • ½ cup Parmesan cheese, grated
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • Fresh basil, for garnish

Instructions

  • Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, and Italian seasoning, then sear for 3-4 minutes per side until golden brown. Remove and set aside.
  • In the same skillet, sauté garlic and sun-dried tomatoes for 1 minute until fragrant.
  • Pour in chicken broth and heavy cream, then add pasta. Stir to combine and bring to a simmer.
  • Cook for 12-15 minutes, stirring occasionally, until pasta is tender and sauce has thickened.
  • Return chicken to the pan and stir in Parmesan cheese. Let everything meld for 2 minutes.
  • Garnish with fresh basil and extra Parmesan before serving.

Notes

  • Use oil-packed sun-dried tomatoes for the best flavor.
  • Adjust spice level by adding red pepper flakes.
  • Substitute half-and-half for a lighter version.
  • Store leftovers in an airtight container for up to 3 days.
