Ingredients

  • 12 oz orecchiette pasta
  • 1 lb Italian sausage, casings removed
  • 3 cups fresh spinach, chopped
  • 3 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1/4 tsp red pepper flakes (optional)
  • Salt and black pepper, to taste

Instructions

  • Cook the orecchiette pasta in salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain.
  • In a large skillet, heat olive oil over medium heat. Add sausage and cook, breaking it up, until browned.
  • Add minced garlic and red pepper flakes. Sautรฉ for 1 minute until fragrant.
  • Stir in spinach and cook until wilted.
  • Toss in the cooked pasta and reserved pasta water. Stir to combine.
