For the Dough:

½ cup brown sugar
2 tsp cinnamon
2 tbsp cornstarch
2 tbsp butter
For the Cobbler Crumble:
½ cup flour
¼ cup brown sugar
¼ cup butter, cold and cubed
¼ tsp cinnamon
For the Glaze:
1 cup powdered sugar
2 tbsp milk or heavy cream
½ tsp vanilla extract
In a bowl, mix warm milk, yeast, and sugar. Let it sit until frothy (about 10 mins).
Add melted butter, egg, salt, and flour. Knead until smooth. Let rise 1 hour or until doubled.
Meanwhile, cook peaches with brown sugar, cinnamon, cornstarch, and butter until thickened. Cool.
