    • 1 package of frozen puff pastry (2 sheets), thawed
    • 4-5 ripe peaches, peeled and sliced
    • 1/4 cup granulated sugar
    • 1 teaspoon ground cinnamon
    • 1 tablespoon lemon juice
    • 1/4 cup brown sugar
    • 1/2 teaspoon vanilla extract
    • 1 tablespoon cornstarch
    • 1 egg, beaten (for egg wash)
    • 1 tablespoon water
  • Optional Toppings:
    • Powdered sugar (for dusting)
    • Vanilla ice cream or whipped cream (for serving)
    • Fresh mint leaves (for garnish)

Instructions

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the peach slices, granulated sugar, cinnamon, lemon juice, brown sugar, vanilla extract, and cornstarch. Mix gently until the peaches are evenly coated.
  • On a lightly floured surface, roll out each sheet of puff pastry and cut into desired shapes (squares, rectangles, or circles).
  • Place the puff pastry pieces on the prepared baking sheet.
  • Spoon the peach mixture onto the center of each pastry piece, leaving a border around the edges.
  • In a small bowl, mix the beaten egg with water to create an egg wash. Brush the edges of the pastry with the egg wash.
  • Fold the edges of the pastry over the peaches, pinching to seal if necessary.
  • Brush the tops of the pastries with the remaining egg wash.
  • Bake for 15-20 minutes, or until the pastries are golden brown and puffed up.
  • Remove from the oven and let cool slightly before dusting with powdered sugar.
  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, and garnish with fresh mint leaves if desired.
