  • 1/2 cup milk
  • 1/2 cup diced fresh peaches

Frosting

  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tbsp heavy cream
  • 1/2 tsp vanilla extract
  • Sliced peaches and raspberries for garnish

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a separate large bowl, cream together the butter and sugar until light and fluffy. Beat in eggs one at a time, followed by vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, until just combined.
  5. Gently fold in diced peaches and raspberries.
  6. Divide the batter evenly among the cupcake liners and bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely before frosting.
  7. For the frosting, beat softened butter until creamy. Gradually add powdered sugar, heavy cream, and vanilla extract. Beat until smooth and fluffy.
  8. Frost the cooled cupcakes and garnish with peach slices and raspberries.
