Ingredients

  • 1 tbsp sesame oil
  • 4 cups chicken or vegetable broth
  • 1 cup water
  • 2 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 8-10 frozen potstickers (pork, chicken, or vegetable)
  • 1 cup mushrooms, sliced
  • 2 cups bok choy, chopped
  • 2 green onions, sliced
  • ½ tsp red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  • Heat sesame oil in a pot over medium heat. Add garlic and ginger, sauté for 1 minute until fragrant.
  • Pour in the broth and water, then add soy sauce and rice vinegar. Bring to a boil.
  • Add mushrooms and potstickers, reduce heat, and simmer for 5-7 minutes.
  • Stir in bok choy and cook for another 2 minutes until wilted.
  • Season with red pepper flakes, salt, and pepper. Garnish with green onions.
