Instructions

 

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and lightly grease an 8x8-inch baking dish or a similar size casserole dish.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, pumpkin pie spice, ground cinnamon, and salt. Stir until well combined.
  3. Mix Wet Ingredients: In a separate bowl, whisk together the canned pumpkin puree, eggs, milk, maple syrup or honey, and vanilla extract until smooth.
  4. Combine and Add Optional Ingredients: Pour the wet ingredients into the dry ingredients and stir until fully combined. If using, fold in the chopped nuts, seeds, raisins, dried cranberries, or chocolate chips.
