  • 1/2 cup all-purpose flour

  • 1 large egg

  • Vegetable oil for frying
  • 4 slices of bread
  • 2 tablespoons mayonnaise
  • 2 slices of cheese (optional)
  • 1 cup mixed greens or lettuce
  • 4 slices of bacon (optional)
  • Hot sauce (optional)

Instructions

  • Slice the green tomatoes into 1/4-inch thick slices.
  • Season the flour with salt, pepper, and optional cayenne pepper.
  • Dip each tomato slice in flour, then in buttermilk mixed with the beaten egg, and finally coat with cornmeal or breadcrumbs.
  • Heat vegetable oil in a skillet over medium heat.
  • Fry the tomato slices until golden brown on both sides, about 3-4 minutes per side.
  • Toast the bread slices in the skillet or toaster.
  • Spread mayonnaise on the toasted bread.
  • Layer fried green tomatoes, cheese (if using), bacon (if using), and mixed greens on the bread.
  • Top with the remaining slice of bread and slice the sandwich in half.
  • Serve immediately with optional hot sauce for extra flavor.

Notes

For a vegetarian version, omit the bacon and consider adding extra greens or avocado. The cayenne pepper is optional but adds a nice kick to the breading.
