For Roasted Chicken:

  • 1 whole chicken (about 4-5 pounds), cleaned and patted dry
  • 2 tablespoons olive oil
  • 1 lemon, halved
  • 4 garlic cloves, minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano

For Roasted Potatoes:

  • 2 pounds Yukon Gold or red potatoes, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika

Instructions

  • Preheat the oven to 425ยฐF (220ยฐC).
  • In a small bowl, mix olive oil, minced garlic, salt, black pepper, paprika, thyme, rosemary, and oregano.
  • Rub the mixture all over the chicken, inside and out. Place the lemon halves inside the chicken cavity.
  • Place the chicken in a roasting pan. In a separate bowl, toss the potato wedges with olive oil, salt, black pepper, garlic powder, rosemary, thyme, and paprika.
  • Arrange the potatoes around the chicken in the roasting pan.
  • Roast in the preheated oven for 1 to 1 1/2 hours, or until the chicken reaches an internal temperature of 165ยฐF (74ยฐC) and the potatoes are golden and crispy.
  • Let the chicken rest for 10 minutes before carving. Serve with the roasted potatoes.
