Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 large carrot, diced
  • 2 celery stalks, chopped
  • 1 (28 oz) can crushed tomatoes
  • 4 cups chicken broth
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • 9 oz refrigerated cheese tortellini
  • 2 cups fresh spinach or kale
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for garnish

Instructions

  • Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove and set aside.
  • In the same pot, sautรฉ onion, garlic, carrot, and celery until softened.
  • Stir in crushed tomatoes, chicken broth, Italian seasoning, and red pepper flakes. Bring to a simmer.
  • Add the cooked sausage back to the pot and simmer for 10 minutes.
  • Stir in tortellini and cook according to package instructions (usually 5-7 minutes).
  • Add spinach or kale, stir until wilted, and season with salt and pepper to taste.
  • Serve hot with grated Parmesan cheese on top.

  • Use spicy sausage for extra heat or mild sausage for a milder flavor.
  • Substitute spinach with kale or Swiss chard for variety.
