1 lb Italian sausage (mild or spicy)
1 tbsp olive oil
1 small onion, diced
2 garlic cloves, minced
1 large carrot, diced
2 celery stalks, chopped
1 (28 oz) can crushed tomatoes
4 cups chicken broth
1 tsp Italian seasoning
1/2 tsp red pepper flakes (optional)
9 oz refrigerated cheese tortellini
2 cups fresh spinach or kale
Salt and pepper, to taste
Grated Parmesan cheese, for garnish
Instructions
Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove and set aside.
In the same pot, sautรฉ onion, garlic, carrot, and celery until softened.
Stir in crushed tomatoes, chicken broth, Italian seasoning, and red pepper flakes. Bring to a simmer.
Add the cooked sausage back to the pot and simmer for 10 minutes.
Stir in tortellini and cook according to package instructions (usually 5-7 minutes).
Add spinach or kale, stir until wilted, and season with salt and pepper to taste.
Serve hot with grated Parmesan cheese on top.
Notes
Use spicy sausage for extra heat or mild sausage for a milder flavor.
Substitute spinach with kale or Swiss chard for variety.
