2 boneless, skinless chicken breasts
2 tablespoons garlic (minced)
2 tablespoons butter
1 tablespoon olive oil
1 zucchini (sliced)
1 cup sweet corn (fresh or frozen)
Salt and pepper to taste
½ teaspoon Italian seasoning
Fresh parsley for garnish (optional)
Season chicken with salt, pepper, and Italian seasoning.
In a large skillet, heat olive oil over medium heat. Add chicken and cook 5-7 minutes per side or until golden and cooked through. Remove and set aside.
In the same skillet, melt butter. Add garlic and sauté until fragrant (about 1 minute).
Add zucchini and corn. Cook until tender, about 5-6 minutes.
Return chicken to skillet and spoon garlic butter mixture over it.
