  • 2 boneless, skinless chicken breasts

  • 2 tablespoons garlic (minced)

  • 2 tablespoons butter

  • 1 tablespoon olive oil

  • 1 zucchini (sliced)

  • 1 cup sweet corn (fresh or frozen)

  • Salt and pepper to taste

  • ½ teaspoon Italian seasoning

  • Fresh parsley for garnish (optional)

Instructions

  1. Season chicken with salt, pepper, and Italian seasoning.

  2. In a large skillet, heat olive oil over medium heat. Add chicken and cook 5-7 minutes per side or until golden and cooked through. Remove and set aside.

  3. In the same skillet, melt butter. Add garlic and sauté until fragrant (about 1 minute).

  4. Add zucchini and corn. Cook until tender, about 5-6 minutes.
