For the Meatloaf:

  • 1 lb ground beef
  • ½ cup breadcrumbs
  • 1 egg
  • ¼ cup milk
  • ½ small onion, finely chopped
  • 1 clove garlic, minced
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • ½ tsp salt
  • ½ tsp black pepper

For the Mashed Potato Frosting:

  • 2 large potatoes, peeled and cubed
  • ¼ cup milk
  • 2 tbsp butter
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions

  • Preheat oven to 375°F (190°C). Grease a muffin tin.
  • Make the meatloaf mixture by combining ground beef, breadcrumbs, egg, milk, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper in a bowl. Mix until well combined.
  • Fill the muffin tin with the meat mixture, pressing gently into each cup. Bake for 20-25 minutes or until fully cooked.
  • Boil the potatoes in a pot of salted water until fork-tender. Drain and mash with milk, butter, salt, and pepper.
  • Pipe or spread the mashed potatoes onto each mini meatloaf after cooling slightly.
