  • 2 bay leaves
  • 2 tbsp olive oil

Instructions

  1. Brown the Beef (Optional but recommended): Heat olive oil in a large skillet over medium-high heat. Brown the beef on all sides for 4-5 minutes per side. Transfer the beef to the slow cooker.
  2. Add Vegetables and Spices: Place sliced onions, bell peppers, and garlic on top of the beef in the slow cooker.
  3. Prepare the Sauce: In a bowl, combine diced tomatoes, green chilies, lime juice, beef broth, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Pour the mixture over the beef and vegetables.
