  • 1 lb ground beef
  • 4 cups diced potatoes (peeled or unpeeled)
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 small onion, diced
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  • Brown the ground beef in a skillet over medium heat. Drain any excess grease.
  • Add diced potatoes, kidney beans, diced tomatoes, onion, garlic powder, smoked paprika, salt, and black pepper to the slow cooker.
  • Pour in the cream of mushroom soup and stir well to combine.
  • Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until the potatoes are tender.
  • In the last 15 minutes of cooking, sprinkle shredded cheddar cheese on top, cover, and allow the cheese to melt.
  • Serve warm and enjoy!
