This Slow Cooker Cowboy Casserole is a hearty, flavorful dish made with ground beef, potatoes, beans, and cheese. Perfect for busy weeknights, this comforting one-pot meal is easy to prepare in your slow cooker.

Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, sliced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 medium onion, chopped
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. In a skillet, cook ground beef until browned. Drain excess fat.
  2. Layer the sliced potatoes in the bottom of the slow cooker.
  3. Add cooked beef, followed by beans, diced tomatoes, and onions.
  4. Spread cream of mushroom soup over the layers.
  5. Sprinkle garlic powder, paprika, salt, and pepper over the top.
  6. Cover and cook on low for 7-8 hours or on high for 4-5 hours.
  7. In the last 30 minutes of cooking, sprinkle shredded cheddar cheese on top and allow it to melt.
  8. Serve hot and enjoy!
