  • 1 lb boneless, skinless chicken breasts
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 cans (15 oz each) white beans (Great Northern or Cannellini), drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 4 cups chicken broth
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup sour cream
  • 1/2 cup heavy cream or half-and-half
  • Juice of 1 lime

Instructions

  • Place the chicken breasts, diced onion, garlic, white beans, green chilies, and chicken broth into your slow cooker.
  • Add the cumin, coriander, chili powder, paprika, salt, and pepper. Stir to combine.
  • Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is tender.
  • Remove the chicken, shred it with two forks, and return it to the slow cooker.
  • Stir in the sour cream and heavy cream. Let it cook for another 15-20 minutes.
  • Add lime juice, stir, and adjust seasoning as needed.
  • Serve hot, garnished with your favorite toppings like cilantro, shredded cheese, or avocado.

Notes

  • For a thicker chili, you can mash some of the beans before adding them to the slow cooker.
