  • 1/2 cup brown sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a bowl, cream together the peanut butter, softened butter, and both sugars until smooth.
  • Add the egg and vanilla extract, mixing well.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Scoop out dough balls and place on a baking sheet lined with parchment paper.
  • Flatten each cookie with a fork, creating a criss-cross pattern.
  • Bake for 10–12 minutes or until lightly golden around the edges.
  • Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Use commercial peanut butter for best results as natural peanut butter can cause texture inconsistencies.
