1 cup cornmeal
1/2 cup all-purpose flour
1 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup buttermilk
1/4 cup melted butter
2 tbsp honey
1 large egg
Oil for frying
Extra honey butter for brushing (2 tbsp melted butter + 1 tbsp honey)
In a bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt.
In another bowl, mix buttermilk, melted butter, honey, and egg until smooth.
Combine wet and dry ingredients; mix until just combined.
Heat oil in a deep skillet or fryer to 350°F (175°C).
Scoop tablespoon-sized portions of batter and carefully drop into hot oil.
Fry until golden brown, about 2–3 minutes per side.
Remove and drain on paper towels.
Brush with honey butter while warm and serve immediately.
Best served fresh and warm.
