Indulge in the authentic flavor of Spaghetti Carbonara, a classic Italian recipe featuring spaghetti, eggs, pancetta, Parmesan, and black pepper.

Ingredients

  • 12 oz spaghetti
  • 2 large eggs
  • 2 large egg yolks
  • 1 cup grated Parmesan cheese
  • 4 oz pancetta or guanciale, diced
  • 2 garlic cloves, minced (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 tbsp olive oil (optional)

Instructions

  1. Cook spaghetti in salted boiling water until al dente. Reserve 1 cup of pasta water before draining.
  2. In a bowl, whisk eggs, egg yolks, and Parmesan until smooth. Set aside.
  3. In a skillet, cook pancetta over medium heat until crispy. Add garlic if using, and cook for 1 minute.
  4. Reduce heat to low, add the drained spaghetti to the skillet, and toss to coat in the pancetta fat.
  5. Remove from heat and quickly mix in the egg mixture, stirring to coat the pasta evenly. Add reserved pasta water as needed to create a creamy sauce.
  6. Season with salt and plenty of black pepper. Serve immediately, garnished with extra Parmesan.

Notes

  • Use guanciale for a more traditional flavor.
  • Be careful not to scramble the eggs; mix off the heat.
  • Adjust creaminess with pasta water as needed.
