  • 4 large russet potatoes, peeled and thinly sliced
  • 6 slices bacon, cooked and crumbled
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 ounces cream cheese, softened
  • 1 cup sour cream
  • 4 tablespoons butter, melted
  • 1/2 cup milk
  • 2 jalapeños, seeded and finely chopped
  • 2 tablespoons hot sauce (adjust to taste)
  • 1/2 cup green onions, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 teaspoon paprika (optional, for garnish)
  • 2 tablespoons parsley, chopped (for garnish)

Instructions

  • Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  • In a large bowl, combine sour cream, cream cheese, melted butter, milk, jalapeños, hot sauce, garlic powder, onion powder, chili powder, salt, and pepper.
  • Add sliced potatoes to the mixture, tossing to coat evenly.
  • Layer half of the potatoes in the prepared baking dish. Sprinkle with half of the bacon, cheddar cheese, and Monterey Jack cheese.
  • Repeat the layers with the remaining potatoes, bacon, and cheeses.
  • Cover with foil and bake for 45 minutes, or until potatoes are tender.
  • Remove foil and bake for an additional 10 minutes until the cheese is bubbly and golden brown.
  • Garnish with green onions, paprika (if using), and parsley. Serve hot.

Notes

  • Adjust the amount of hot sauce and jalapeños to control the spiciness.
  • For a milder version, omit the jalapeños or reduce the amount of hot sauce.
