  • 2 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1/2 tsp red pepper flakes (optional)
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup tomato paste
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 12 oz penne pasta (or pasta of choice)
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley or basil for garnish

Instructions

  • Cook pasta in a pot of salted boiling water until al dente. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Add Italian sausage and cook until browned, breaking it into crumbles.
  • Add onion and garlic to the skillet. Sautรฉ until softened and fragrant.
  • Stir in diced tomatoes, tomato paste, chicken broth, and red pepper flakes. Simmer for 10 minutes.
  • Lower heat and stir in heavy cream until sauce is smooth and creamy.
