  • 1 9-inch pie crust (store-bought or homemade)

  • 1 tbsp olive oil

  • 1 small onion, finely chopped

  • 2 cups fresh spinach, chopped

  • 1 cup mushrooms, sliced

  • 4 large eggs

  • 1 cup milk (or half-and-half for creamier texture)

  • 1 cup shredded cheese (Swiss, Gruyère, or cheddar)

  • Salt and pepper to taste

  • 1/4 tsp nutmeg (optional)

Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a skillet, heat olive oil over medium heat. Sauté onions until translucent.

  3. Add mushrooms and cook until tender. Add spinach and cook until wilted. Remove from heat and let cool slightly.

  4. In a bowl, whisk eggs, milk, salt, pepper, and nutmeg.

  5. Spread the spinach-mushroom mixture over the pie crust. Sprinkle with cheese.

  6. Pour the egg mixture over the top.

  7. Bake for 35–40 minutes, or until the center is set and the top is golden.

  8. Let cool slightly before slicing and serving.

Notes

  • You can use frozen spinach (thawed and drained) as a substitute for fresh.
