  • Pumpkin Muffins:
    • 1 3/4 cups all-purpose flour
    • 1 cup granulated sugar

    • 1 teaspoon ground cinnamon

    • 1 cup canned pumpkin puree

    • 1/4 cup milk
    • 1 teaspoon vanilla extract
  • Cream Cheese Filling:
    • 8 oz cream cheese, softened
    • 1/4 cup granulated sugar
    • 1 large egg yolk
    • 1/2 teaspoon vanilla extract
  • Topping:
    • 1/4 cup pepitas (pumpkin seeds)
    • 1 tablespoon granulated sugar

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and line a muffin tin with paper liners.
  2. In a large bowl, mix together flour, granulated sugar, brown sugar, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.
  3. In another bowl, whisk together the pumpkin puree, vegetable oil, eggs, milk, and vanilla extract.
  4. Combine the wet and dry ingredients, mixing until just combined.
  5. For the cream cheese filling, beat together the cream cheese, sugar, egg yolk, and vanilla extract until smooth.
  6. Fill each muffin cup halfway with batter, then add a spoonful of cream cheese filling to the center. Top with more batter to cover the filling.
  7. Sprinkle pepitas and sugar over the top of each muffin.
  8. Bake for 18-22 minutes, or until a toothpick inserted into the muffin (not the cream cheese) comes out clean.
  9. Cool muffins in the tin for 5 minutes before transferring to a wire rack to cool completely.
