  • 2 cups fresh strawberries, chopped
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon (optional)
  • 1/2 cup chopped nuts (optional, walnuts or pecans work well)

Instructions

  • Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan and set aside.
  • In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, and cinnamon (if using).
  • In another bowl, whisk together the vegetable oil, milk, eggs, and vanilla extract until well combined.
  • Add the wet ingredients to the dry ingredients and mix until just combined.
  • Gently fold in the chopped strawberries and nuts (if using) until evenly distributed.
  • Pour the batter into the prepared loaf pan and spread it out evenly.
  • Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • For a more intense strawberry flavor, use very ripe strawberries.
  • The addition of nuts adds a nice crunch and complements the sweetness of the strawberries.
