It's a quick, hearty, and flavorful casserole that delivers all the comforting tastes of traditional stuffed peppers in an easy-to-make dish.

Ingredients

  • Ground beef or turkey
  • Bell peppers (red, green, yellow)
  • Onion
  • Garlic
  • Diced tomatoes
  • Tomato sauce
  • Uncooked white rice
  • Beef or vegetable broth
  • Cheddar cheese
  • Olive oil
  • Salt & pepper
  • Italian seasoning

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC).
  2. Cook rice according to package instructions. Set aside.
  3. In a large skillet, heat olive oil and sautรฉ onion, garlic, and bell peppers until softened.
  4. Add ground beef and cook until browned. Drain excess fat.
  5. Stir in diced tomatoes, tomato sauce, broth, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  6. Mix in the cooked rice and transfer the mixture to a greased casserole dish.
  7. Top with cheddar cheese and bake for 20-25 minutes, or until cheese is melted and bubbly.
  8. Let cool slightly before serving.
