Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup spinach (fresh or cooked)
  • ½ cup cream cheese, softened
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • 2 tablespoons olive oil

Instructions

  • Preheat your oven to 375°F (190°C).
  • Butterfly each chicken breast by slicing through the side without cutting completely in half.
  • In a bowl, mix spinach, cream cheese, mozzarella, Parmesan, garlic, salt, and pepper until combined.
  • Spoon the filling evenly into each chicken breast and secure with toothpicks.
  • Season the outside of the chicken breasts with smoked paprika, salt, and pepper.
  • Heat olive oil in an oven-safe skillet over medium heat. Sear the chicken on both sides until golden brown (about 2-3 minutes per side).
  • Transfer the skillet to the oven and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  • Remove from oven, let rest for 5 minutes, and serve.

Notes

  • For extra flavor, try adding sun-dried tomatoes or chopped bacon to the filling.
  • Use a meat thermometer to ensure chicken is fully cooked.
  • Serve with roasted vegetables, mashed potatoes, or a fresh salad for a complete meal.
