  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper to taste
  • Toothpicks (for sealing)

Instructions

  • Preheat oven to 375°F (190°C).
  • In a bowl, mix the spinach, cream cheese, mozzarella, Parmesan, and garlic until well combined.
  • Using a sharp knife, carefully slice a pocket into the side of each chicken breast, being careful not to cut through.
  • Stuff each chicken breast with the spinach-cheese mixture and seal with toothpicks.
  • Rub the chicken breasts with olive oil, then season with paprika, salt, and pepper.
  • In an oven-safe skillet, sear the chicken over medium-high heat for 2-3 minutes on each side until golden brown.
  • Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  • Remove from the oven, let rest for 5 minutes, and serve.

Notes

  • You can add sun-dried tomatoes to the filling for extra flavor.
  • For a crispy finish, broil the chicken for the last 2-3 minutes of baking.
