Make a flavorful stuffed pepper casserole with ground beef, rice, and diced bell peppers. Topped with cheddar and mozzarella cheese, this comforting dish is ideal for a family dinner and can be enhanced with sour cream, fresh basil, and other toppings.

  • 1 pound ground beef or turkey
  • 1 cup uncooked rice
  • 3 bell peppers (red, green, yellow), diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) tomato sauce
  • 1 cup beef or chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Toppings and Garnishes:

  • Sour cream
  • Fresh basil leaves
  • Crushed red pepper flakes
  • Sliced green onions
  • Avocado slices

Instructions

  • Preheat your oven to 375ยฐF (190ยฐC).
  • In a large skillet, heat the olive oil over medium heat. Add the diced onions and cook until translucent, about 3-4 minutes.
  • Add the ground beef or turkey, and cook until browned, breaking it apart with a spoon.
  • Stir in the minced garlic and diced bell peppers, cooking for another 3-4 minutes until softened.
  • Add the uncooked rice, diced tomatoes, tomato sauce, broth, oregano, basil, salt, and black pepper. Stir to combine.
  • Bring the mixture to a simmer, then transfer it to a greased casserole dish.
  • Cover the dish with foil and bake in the preheated oven for 45 minutes, until the rice is tender.
  • Remove the foil and sprinkle the cheddar and mozzarella cheese on top.
  • Return to the oven and bake, uncovered, for an additional 10-15 minutes, until the cheese is melted and bubbly.
  • Garnish with fresh parsley and serve with your choice of toppings.

Notes

  • Substitute ground beef with ground turkey for a lighter option.
  • Adjust seasoning to taste.
