For the Blueberry Ice Cream:

  • 2 cups fresh blueberries

  • 1/2 cup granulated sugar

  • 1 tbsp lemon juice

  • 1 1/2 cups heavy cream

  • 1 cup whole milk

  • 1/2 tsp vanilla extract

For the Cookies:

  • 1 cup unsalted butter, softened

  • 1 cup brown sugar

  • 1/2 cup granulated sugar

  • 2 large eggs

  • 2 tsp vanilla extract

  • 2 1/4 cups all-purpose flour

  • 1/2 tsp baking soda

  • 1/2 tsp salt

Instructions

  1. In a saucepan, combine blueberries, sugar, and lemon juice. Simmer until berries burst and mixture thickens. Cool and blend into a puree.

  2. In a mixing bowl, combine blueberry puree with cream, milk, and vanilla. Chill for 2 hours.

  3. Churn the mixture in an ice cream maker as per manufacturer’s directions. Freeze until firm.

  4. Preheat oven to 350°F (175°C). Cream butter and sugars until light and fluffy. Add eggs and vanilla.

  5. Mix in flour, baking soda, and salt until combined.

  6. Scoop dough onto baking sheets and bake for 10–12 minutes. Let cool completely.

  7. Scoop blueberry ice cream onto one cookie, top with another to make sandwiches.

  8. Freeze assembled sandwiches for at least 1 hour before serving.

Notes

  • You can use store-bought blueberry ice cream if short on time.

  • Cookies can be baked ahead and frozen.

  • For a crunch, roll the edges in crushed graham crackers or white chocolate chips before freezing.
