This Summer Lemon Butter Baked Cod is a light and refreshing seafood dish that combines the richness of butter and the zesty kick of lemon. Easy to make, perfect for a healthy weeknight dinner or a summer gathering.

 

Ingredients

  • 4 cod fillets

  • 1/4 cup unsalted butter, melted

  • 2 tbsp lemon juice

  • 2 tsp lemon zest

  • 2 garlic cloves, minced

  • 1/2 tsp dried thyme

  • 1/2 tsp dried parsley

  • Salt and pepper to taste

  • Fresh parsley for garnish

  • Lemon wedges (optional, for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).

  2. Place the cod fillets in a baking dish.

  3. In a small bowl, combine the melted butter, lemon juice, lemon zest, minced garlic, thyme, parsley, salt, and pepper.

  4. Pour the lemon butter mixture over the cod fillets.

  5. Bake for 12-15 minutes, or until the fish is cooked through and flakes easily with a fork.

  6. Garnish with fresh parsley and serve with lemon wedges, if desired.
