This Summer Lemon Butter Baked Cod is a light and refreshing seafood dish that combines the richness of butter and the zesty kick of lemon. Easy to make, perfect for a healthy weeknight dinner or a summer gathering.
4 cod fillets
1/4 cup unsalted butter, melted
2 tbsp lemon juice
2 tsp lemon zest
2 garlic cloves, minced
1/2 tsp dried thyme
1/2 tsp dried parsley
Salt and pepper to taste
Fresh parsley for garnish
Lemon wedges (optional, for serving)
Preheat your oven to 400°F (200°C).
Place the cod fillets in a baking dish.
In a small bowl, combine the melted butter, lemon juice, lemon zest, minced garlic, thyme, parsley, salt, and pepper.
Pour the lemon butter mixture over the cod fillets.
Bake for 12-15 minutes, or until the fish is cooked through and flakes easily with a fork.
Garnish with fresh parsley and serve with lemon wedges, if desired.
Cod can be swapped for other white fish such as haddock or tilapia.
Serve with a side of vegetables or a salad for a complete meal.
For added flavor, try sprinkling some parmesan cheese over the fish before baking
