  • 8 oz linguine or spaghetti

  • 1 lb large shrimp, peeled and deveined

  • 3 tbsp olive oil

  • 4 garlic cloves, minced

  • Zest and juice of 1 large lemon

  • 1/4 tsp crushed red pepper flakes (optional)

  • Salt and pepper to taste

  • 2 tbsp fresh parsley, chopped

  • 1/4 cup grated Parmesan cheese (optional)

  • 1/2 cup pasta water (reserved)

Instructions

  1. Cook pasta in salted water according to package instructions. Reserve 1/2 cup of pasta water, then drain.

  2. In a large skillet, heat olive oil over medium heat. Add garlic and cook for 30 seconds until fragrant.

  3. Add shrimp, season with salt, pepper, and red pepper flakes, and cook until pink and opaque (2–3 minutes per side).

  4. Stir in lemon juice, lemon zest, and cooked pasta. Toss to combine, adding reserved pasta water to loosen sauce if needed.

  5. Sprinkle with chopped parsley and Parmesan if using. Serve immediately.

Notes

  • Add cherry tomatoes or spinach for extra color and nutrients.

  • Use gluten-free pasta if desired.
