Ingredients

  • 2 cups fresh peaches, peeled and chopped

  • 1 tablespoon lemon juice

  • 23 tablespoons honey or maple syrup (adjust to taste)

  • 1 teaspoon vanilla extract

  • 1/2 cup full-fat Greek yogurt

  • 1/2 cup coconut milk or whole milk

  • Optional: extra peach slices for texture

Instructions

  1. In a blender, combine peaches, lemon juice, honey, and vanilla extract. Blend until smooth.

  2. Add Greek yogurt and coconut milk to the blender. Blend again until fully combined.

  3. Taste and adjust sweetness if needed.

  4. Pour the mixture into ice pop molds, leaving a little room at the top for expansion.

  5. Insert sticks and freeze for at least 4–6 hours, or until solid.

  6. To release, run warm water over the outside of the molds for a few seconds.

Notes

  • For chunkier texture, stir in small diced peaches before freezing.

  • Use dairy-free yogurt and plant milk for a vegan option.

  • Peaches can be substituted with nectarines or mango.
