Ingredients

  • 2 cups mixed greens (spinach, arugula, lettuce)

  • 1 cucumber, sliced

  • 1 cup cherry tomatoes, halved

  • 1/2 red onion, thinly sliced

  • 1/4 cup feta cheese (optional)

  • 1/4 cup black olives (optional)

  • 1/4 cup olive oil

  • 1 tbsp balsamic vinegar

  • 1 tsp Dijon mustard

  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the mixed greens, cucumber, cherry tomatoes, and red onion.

  2. In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, salt, and pepper.

  3. Drizzle the dressing over the salad and toss gently to combine.

  4. Add feta cheese and olives if using, and toss again.

  5. Serve immediately or refrigerate for later.

Notes

  • For a vegan version, skip the feta cheese.

  • Add grilled chicken or shrimp for extra protein.

  • This salad can be stored in the fridge for up to 1 day before the dressing is added.
